  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • 1 cup crushed graham crackers
  • 1/4 cup melted butter (for crust)
  • 1/2 cup packed brown sugar (for swirl)
  • 1/4 cup melted butter (for swirl)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a springform pan lightly.
  2. In a bowl, mix crushed graham crackers, melted butter, and sugar; press into the bottom of the pan and bake for 10 minutes.
  3. Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, combine brown sugar, cinnamon, and melted butter until crumbly. Layer half over the cheesecake filling and gently swirl with a knife.
  5. Pour remaining filling into the pan over the first swirl layer and top with remaining cinnamon mixture. Bake for 55-65 minutes until just set in the center.
  6. Allow to cool at room temperature before refrigerating for at least four hours or overnight.
