  • 4 medium sweet potatoes (about 2 lbs)
  • 1 cup fresh cranberries
  • 2 medium Granny Smith apples, diced
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 2 tbsp butter
  • 1/4 tsp nutmeg

Instructions

  1. 1. Preheat oven to 400°F (200°C). Wash and dry sweet potatoes, poke holes in them with a fork.
  2. 2. Bake sweet potatoes on a foil-lined baking sheet for 45-60 minutes until tender.
  3. 3. Meanwhile, chop cranberries and apples; mix with brown sugar, cinnamon, nutmeg, and butter in a bowl.
  4. 4. Once sweet potatoes are done, cool slightly, cut in half lengthwise, and scoop out most flesh into a bowl.
  5. 5. Mash sweet potato flesh with the cranberry-apple mixture until creamy. Spoon filling back into potato skins.
  6. 6. Return stuffed sweet potatoes to the oven for an additional 15-20 minutes until heated through and golden.
