  • 1 cup almond flour (96g)
  • 1 cup icing sugar (120g)
  • 3 large egg whites (100g, room temperature)
  • ½ cup granulated sugar (100g)
  • ½ tsp red gel food coloring
  • ½ cup unsalted butter (113g, softened)
  • 1 cup powdered sugar (120g)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a bowl, sift together almond flour and icing sugar. In another bowl, whip egg whites until soft peaks form, gradually adding granulated sugar until stiff peaks form. Gently fold in dry ingredients and red food coloring.
  3. Transfer the batter to a piping bag and pipe circles onto prepared baking sheets. Let sit for 30 minutes to form a skin.
  4. Bake for 15-20 minutes until they lift easily off parchment paper.
  5. For the filling, beat softened butter until creamy, then mix in powdered sugar and vanilla extract until fluffy.
  6. Assemble by pairing macaron shells, piping filling onto one shell and topping with another. Chill for at least one hour before serving.
