  • 1 cup fresh cranberries (or frozen)
  • 1/4 cup brown sugar
  • 2 tbsp fresh rosemary, chopped
  • 2 garlic cloves, minced
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season pork tenderloin with salt and pepper. Sear in a hot skillet with olive oil until golden brown on all sides.
  3. In a saucepan, combine cranberries, brown sugar, minced garlic, chicken broth, balsamic vinegar, and rosemary. Cook over medium heat until cranberries burst and sauce thickens (about 10 minutes).
  4. Place the seared pork in the baking dish and pour half the glaze over it. Roast for 25-30 minutes or until the internal temperature reaches at least 145°F (63°C), basting with remaining glaze halfway through.
  5. Let rest for 5 minutes before slicing; serve with additional sauce drizzled on top.
