  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • ½ cup cranberry jam
  • 6 oz white chocolate, melted
  • 1 cup heavy whipping cream

Instructions

  1. Preheat the oven to 325°F (160°C). Mix graham cracker crumbs with melted butter and press into the base of a springform pan.
  2. Beat cream cheese until smooth; gradually add sugar, then incorporate sour cream and eggs one at a time.
  3. Pour half the filling over the crust, swirl in half of the cranberry jam, then top with remaining filling.
  4. Bake for 50-60 minutes until slightly jiggly in the center. Cool in the oven for an hour before refrigerating for at least four hours.
  5. Melt white chocolate; fold into whipped heavy cream to create mousse. Spread on top of cooled cheesecake and refrigerate again until set.
