  • 2 lbs beef chuck roast
  • 4 dried guajillo peppers
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 3 cups beef broth
  • 2 cups cheddar cheese, shredded
  • 4 slices sourdough bread
  • 2 tbsp butter

Instructions

  1. Trim excess fat from the beef chuck roast and cut it into large chunks. Season generously with salt and pepper.
  2. In a large pot, toast the guajillo peppers over medium heat until fragrant. Add chopped onion and garlic, then pour in the beef broth and bring to a simmer.
  3. Add the beef chunks to the pot, cover, and slow-cook on low for about 3 hours or until tender enough to shred.
  4. Shred the cooked beef using two forks. Layer shredded birria and cheddar cheese between two slices of sourdough bread.
  5. Heat a skillet over medium heat with butter. Grill the sandwich until golden brown on both sides (about 3 minutes per side).
  6. Serve hot with consomé for dipping.
