  • 2 tablespoons Dijon mustard

  • 1/4 cup apple cider vinegar
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick cooking spray.
  2. Season the pork tenderloin generously with salt and pepper.
  3. In a medium saucepan over medium heat, combine cranberries, brown sugar, Dijon mustard, apple cider vinegar, chicken broth, and chopped rosemary. Cook until the cranberries burst and the mixture thickens (about 10 minutes).
  4. In a skillet over medium-high heat, heat olive oil and sear the pork on all sides until browned (about 3-4 minutes per side).
  5. Place the seared pork in the baking dish, pour half of the glaze over it, and roast in the oven for about 25-30 minutes or until it reaches an internal temperature of 145°F (63°C).
