  • 2 cups fresh cranberries
  • 1/4 cup brown sugar
  • 4 garlic cloves, minced
  • 1 cup low-sodium beef broth
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the beef roast generously with salt and pepper. In a large skillet over medium-high heat, sear the roast for about 3-4 minutes on each side until browned.
  3. In a mixing bowl, combine cranberries, brown sugar, minced garlic, thyme, rosemary, and beef broth until evenly coated.
  4. Place the seared roast in a baking dish and pour the cranberry mixture over it. Add more broth if needed to keep it moist.
  5. Cover with aluminum foil and roast for approximately two hours or until the internal temperature reaches at least 135°F (57°C) for medium-rare.
  6. Let rest for 15 minutes before slicing and serve drizzled with remaining sauce.
