  • 8 oz penne pasta
  • 1 lb Italian sausage (mild or spicy)
  • 1 medium butternut squash (about 2 cups roasted)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Halve the butternut squash lengthwise, scoop out the seeds, and place cut side down on a parchment-lined baking sheet. Roast for 30-35 minutes until tender.
  2. Meanwhile, boil a large pot of salted water. Cook the penne according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. In a large skillet over medium heat, add olive oil and Italian sausage. Cook until browned, about 7-10 minutes. Add minced garlic during the last minute.
  4. Scoop the roasted squash into the skillet with the sausage. Stir in heavy cream and mix well over low heat. Gradually add reserved pasta water until desired consistency is achieved.
  5. Toss in cooked pasta and fresh spinach into the skillet. Mix gently until spinach wilts, about 2-3 minutes. Season with salt and pepper to taste.
  6. Serve hot with additional grated Parmesan cheese on top.
