  • 2 tbsp blackening seasoning
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 oz cream cheese
  • 1 cup low-sodium beef broth
  • 8 oz egg noodles
  • ½ cup sour cream

Instructions

  1. Toss shrimp in blackening seasoning until coated. Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2 minutes per side until charred and opaque. Remove and set aside.
  2. In the same skillet, sauté onion and mushrooms for about 5 minutes until softened. Add garlic and cook for an additional minute.
  3. Lower the heat; stir in cream cheese until melted, then gradually add beef broth while stirring to form a smooth sauce. Simmer for 3 minutes.
  4. Mix in sour cream until combined. Add cooked pasta and return shrimp to skillet; toss everything together until well-coated.
  5. Serve hot, garnished with fresh herbs if desired.
