  • 1 cup pure apple cider
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cinnamon
  • 2 large sweet potatoes (about 1 lb), peeled and chopped
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Heat olive oil in an oven-safe skillet over medium-high heat. Season pork with salt and pepper, sear until browned on all sides.
  2. Remove pork, add minced garlic to the skillet, cook for a minute. Pour in apple cider and sprinkle cinnamon, stir well.
  3. Return seared pork to skillet, cover, and bake for 25-30 minutes or until internal temperature reaches 145°F (63°C).
  4. Meanwhile, boil sweet potatoes in salted water until fork-tender (15-20 minutes). Drain, then mash with butter, salt, and pepper until creamy.
  5. Let pork rest for five minutes before slicing thinly. Serve over mashed sweet potatoes with sauce drizzled on top.
