  • 1/2 cup buffalo sauce (adjust to taste)
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 package (17.3 oz) puff pastry sheets, thawed
  • Ranch dressing for dipping

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken thighs with salt, pepper, and half of the buffalo sauce. Roast on a baking sheet for about 20 minutes until cooked.
  2. Let chicken cool slightly, then shred using two forks and combine with remaining buffalo sauce.
  3. In a bowl, mix shredded chicken with cream cheese and cheddar until creamy.
  4. Roll out puff pastry and cut into squares large enough to hold filling.
  5. Place a tablespoon of the chicken mixture in each square, fold corners over to seal.
  6. Arrange on a parchment-lined baking sheet, brush with egg wash, and bake for 15-20 minutes until golden.
