  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 tsp peppermint extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy. Mix in the egg yolk and peppermint extract.
  3. Gradually add flour and cocoa powder, mixing until combined.
  4. Scoop tablespoon-sized portions of dough into balls and place them on the prepared baking sheets, making an indentation in each with your thumb.
  5. Bake for 10-12 minutes until set but soft. Cool on sheets for a few minutes before transferring to wire racks.
  6. While cooling, melt chocolate chips in the microwave until smooth, then fill each thumbprint with melted chocolate.
