  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 oz fettuccine pasta
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 cup sour cream
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper. In a skillet, heat 1 tablespoon of butter over medium heat, then cook the chicken for 6-7 minutes per side until golden brown. Remove from skillet and let rest.
  2. In a pot, boil salted water and cook fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
  3. In the same skillet, melt another tablespoon of butter and sauté minced garlic for about one minute. Stir in sour cream and smoked paprika until smooth.
  4. Slice cooked chicken and return it to the skillet with sauce. Add drained pasta and reserved pasta water as needed for desired consistency. Toss gently to coat.
  5. Garnish with chopped parsley before serving.
