  • 1 cup granulated sugar (plus extra for rolling)

  • 2 large eggs (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, baking powder, and salt.
  3. In a large bowl, beat granulated sugar and molasses until smooth. Add eggs one at a time, mixing well after each addition.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Scoop tablespoon-sized portions of dough, roll into balls, then coat in granulated sugar followed by powdered sugar.
  6. Place on baking sheets about two inches apart and bake for 10-12 minutes or until they begin to crack on top. Cool completely on wire racks.
