  • 1 cup bell peppers (mixed colors), chopped
  • 8 oz breakfast sausage (pork or turkey), crumbled
  • 4 large eggs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and crispy (15-20 minutes).
  2. Stir in the chopped onion and bell peppers. Sauté until softened (5-7 minutes).
  3. Push the potato mixture aside and add the crumbled sausage to the cleared space. Cook until browned (5-8 minutes).
  4. Combine all ingredients in the skillet, sprinkle with garlic powder, and mix well.
  5. Create small wells in the mixture; crack an egg into each well. Cover and cook until egg whites are set (about 5-7 minutes). Serve hot.
