My Fave Birria Tacos are a mouthwatering fusion of tender, spiced meat wrapped in warm tortillas, perfect for any occasion. Marinated to perfection, these tacos are served with a savory dipping broth that elevates every bite. Ingredients

  • 3 lbs chuck roast
  • 4 dried guajillo chiles (seeds removed)
  • 2 medium yellow onions (chopped)
  • 6 garlic cloves (minced)
  • 2 tsp cumin seeds (toasted)
  • 4 cups low-sodium beef broth
  • Salt to taste
  • Corn tortillas for serving

Instructions

  1. Blend soaked guajillo chiles, onions, garlic, toasted cumin seeds, and 1 cup of beef broth until smooth to create the marinade.
  2. Coat the chuck roast with the marinade in a bowl. Cover and refrigerate for at least 2 hours or overnight.
  3. In a large pot, add the marinated meat and remaining beef broth. Simmer for about 3 hours on low heat until tender.
  4. Shred the cooked meat with two forks and set aside.
  5. Warm corn tortillas in a skillet until soft.
  6. Fill each tortilla with shredded meat, garnish with chopped onions and cilantro, and serve with broth on the side for dipping.
