  • 1 lb lean ground chicken
  • 1 cup breadcrumbs (plain or Italian)
  • 1 cup grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup ketchup (optional: mix with 1 tbsp Worcestershire sauce)

Instructions

  1. Preheat oven to 375°F (190°C). Prepare a loaf pan or line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. In a large bowl, combine ground chicken, sautéed onion and garlic, breadcrumbs, Parmesan cheese, eggs, Italian seasoning, salt, and pepper. Mix until just combined.
  4. Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.
  5. Spread ketchup (and Worcestershire sauce if using) evenly over the top of the meatloaf.
  6. Bake for 45-50 minutes until internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.
