  • 12 frozen potstickers (chicken, pork, or vegetable)
  • 1 cup mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 1 tablespoon fresh ginger (grated)
  • 2 cloves garlic (minced)
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons sesame oil (divided)
  • 1 tablespoon rice vinegar
  • Sesame seeds or green onions for garnish (optional)

Instructions

  1. Prepare your ingredients by chopping vegetables into bite-sized pieces and mincing garlic and ginger.
  2. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat until shimmering.
  3. Add the frozen potstickers in a single layer and cook for 3-4 minutes on each side until golden brown. Remove from the pan and set aside.
  4. In the same pan, add another tablespoon of sesame oil if needed. Stir-fry mixed vegetables with minced garlic and grated ginger for about 5-7 minutes until tender-crisp.
  5. Return potstickers to the pan, pour in soy sauce and rice vinegar, and stir gently to combine.
  6. Serve hot, garnished with sesame seeds or green onions if desired.
