  • 6 slices thick-cut bacon
  • 1/2 cup bourbon BBQ sauce (divided)
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cook bacon in a skillet over medium heat until crispy. Remove and chop into small pieces.
  3. In a large bowl, combine ground beef, chopped bacon, breadcrumbs, onion powder, garlic powder, and half of the bourbon BBQ sauce. Mix until just combined.
  4. Form the mixture into golf ball-sized meatballs (16-20 total) and place on the baking sheet.
  5. Bake for 20-25 minutes until cooked through (internal temp should reach 165°F/74°C).
  6. Brush with remaining bourbon BBQ sauce and return to oven for an additional 5 minutes to caramelize.
