  • 1 lb flank steak, thinly sliced
  • 2 cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 tbsp low-sodium soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil (divided)

Instructions

  1. Slice the flank steak against the grain into thin strips. Wash and cut broccoli into bite-sized florets. Mince garlic and grate ginger.
  2. In a bowl, combine sliced beef with 2 tablespoons soy sauce, cornstarch, and half of the minced garlic. Marinate for 15 minutes.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add broccoli and stir-fry for about 3 minutes until bright green and tender-crisp. Remove from the pan.
  4. In the same skillet, add another tablespoon of oil if needed. Add marinated beef in a single layer; cook without stirring for 2 minutes until browned, then stir-fry until cooked through.
  5. Return broccoli to the skillet with remaining garlic, ginger, and any leftover marinade mixed with brown sugar. Stir well to combine all ingredients.
  6. Serve hot over steamed rice or noodles.
