Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 3 cloves fresh garlic, minced
  • 1 inch ginger root, grated
  • 2 tbsp Sriracha sauce (adjust for spiciness)
  • ½ cup mayonnaise
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper. Set up a breading station: one bowl with flour, another with beaten eggs, and the last with panko mixed with garlic and ginger.
  3. Dip each chicken breast in flour, then egg, then coat in panko breadcrumbs.
  4. Place breaded chicken on the baking sheet and bake for 20-25 minutes until golden brown and cooked through (internal temp should reach at least 165°F).
  5. While baking, whisk together mayonnaise, Sriracha, soy sauce, and honey in a bowl.
  6. Once cooked, let the chicken rest briefly before slicing into strips. Drizzle with the sauce before serving.
