  • 8 oz spaghetti or fettuccine
  • 1 lb boneless, skinless chicken breast, diced
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/3 cup creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil. Once heated, sauté the diced chicken seasoned with salt and pepper until golden brown and cooked through (about 6–8 minutes). Remove from heat.
  3. In the same skillet, add bell peppers, carrots, snap peas, garlic, and ginger. Stir-fry for about 3–4 minutes until tender-crisp.
  4. In a bowl, whisk together peanut butter, soy sauce, lime juice, and a splash of reserved pasta water until smooth. Pour into the skillet with vegetables.
  5. Add cooked pasta to the skillet and toss gently to combine everything. Heat through for another 2 minutes on low heat.
  6. Serve warm garnished with chopped green onions or cilantro if desired.
