  • 1 cup canned black beans, rinsed
  • 1 cup frozen corn
  • ½ cup green onions, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 10 egg roll wrappers
  • 1 cup sour cream
  • 2 tbsp chipotle sauce

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine shredded chicken, black beans, corn, green onions, cumin, chili powder, salt, and pepper; mix well.
  3. Place about 2 tablespoons of filling in the center of each egg roll wrapper. Fold the bottom corner over the filling tightly, fold in the sides, and roll up to seal.
  4. Arrange eggrolls seam-side down on the prepared baking sheet. Lightly brush or spray with oil for crispiness and bake for 20-25 minutes until golden brown.
  5. For the dipping sauce, mix sour cream with chipotle sauce; adjust seasoning as desired.
